Lauren Schmitt, MS, RD, CPT

Owner of Healthy Eating & Training, Inc.

Lauren Schmitt is a registered dietitian and certified personal trainer specializing in individual and corporate wellness, eating disorders, and weight management. Lauren has a Master’s degree in Family and Consumer Sciences from California State University at Northridge (CSUN) with a concentration in Nutrition. She is a registered dietitian and NASM certified personal trainer. Her experiences in the field range from work with individuals aiming to achieve a healthier lifestyle to the creation of corporate wellness programs. Lauren currently owns her own business, Healthy Eating and Training, Inc., where she counsels individuals and gives them the tools to lead a balanced, healthy life through nutritious eating and physical activity.

Lauren has extensive experience in the field of nutrition. In addition to seeing clients in the private practice, Lauren has developed nutrition programs for major corporations. She is currently the onsite nutritionist at Sony Pictures Entertainment and Dreamworks Animation. She has ongoing projects with the WB and recently completed a project for the Creative Artists Agency. Lauren is also a part of many eating disordered outpatient teams in the Los Angeles area. She sees clients in her practice with anorexia nervosa, bulimia nervosa, and binge/compulsive overeating. Lauren treats each client individually and formulates a different plan based on the client’s unique goals. In the past, she served as an instructor in the dietetics department at CSUN and Santa Monica College.

Brooke Horn DeKofsky, MPH, RD, LE

Consultant Dietitian

Brooke graduated Cum Laude with a Bachelor of Science degree in Nutrition from California Polytechnic State University, San Luis Obispo. In 2010, she earned her Master of Public Health degree from UCLA in combination with a Dietetic Internship at the Veteran Affairs Medical Center in West Los Angeles. After completing her internship, Brooke worked for a Federally Qualified Health Clinic as part of their CPSP (Comprehensive Perinatal Services Program) in collaboration with the Los Angeles Best Babies Network. She is trained in lactation education (CLE) by Childbirth and Postpartum Professional Association. Additionally, Brooke works with the Santa Monica-Malibu School Head Start program and counsels families on nutrition to ensure healthy growth and development for preschoolers.

Brooke specializes in weight loss, sports nutrition, treatment for eating disorders and chronic disease management. She teaches classes and works individually with clients on weight concerns, disordered eating habits and Diabetic care. She has worked with the UCLA athletics department, an opportunity that gave her vast knowledge on sports nutrition. Brooke is certified in Diabetes Education (CDE) accredited by the American Association for Diabetes Educators giving her expertise knowledge to work with high risk clients. Brooke works part-time in corporate wellness with Sony Pictures Entertainment and Disney Animation in addition to private counseling. She is also teaching Nutrition Science courses at California State University, Long Beach.


Hollie Gelberg, Ph.D., RD

Consultant Dietitian

Hollie started out as a psychology major at the University of Pennsylvania, and after graduating went on to The University of Akron where she received Master's and Doctorate degrees in Industrial and Organizational (I/O) Psychology. After spending over a decade as an I/O Psychologist in both private and public sectors, she decided to pursue her interest in nutrition professionally. She went back to school at Cal Poly Pomona and fulfilled the dietetic coursework to become a Registered Dietitian. She completed the Dietetic Internship at the Veterans Affairs Greater Los Angeles Healthcare System, and received RD certification in 2011.

Since then, she has been working as a Clinical/Research Dietitian at the VA Greater Los Angeles Healthcare System, counseling Veterans as part of a behavioral weight management program. She also enjoys working with clients in private practice, focusing on chronic medical conditions such as obesity, diabetes, hypertension, and heart disease, as well as general weight management, gastrointestinal disorders, and eating disorders. Her nutrition interests also include plant-based diets.


Nicole Weinger, RD

Consultant Dietitian

Nicole earned her Bachelors degree in Retail and Consumer Studies from the University of Arizona in 2000. She started her career working in the retail buying office for Barneys New York in Manhattan. After moving back to Los Angeles, she decided to pursue her interest in nutrition and completed her dietetic coursework at Pepperdine University. She then completed her Dietetic Internship with the Veterans Affairs Greater Los Angeles Healthcare System. After becoming a Registered Dietitian, she continued working for the VA Healthcare System working in outpatient counseling and focusing mainly on weight loss and chronic disease management. After leaving the VA, she joined Healthy Eating and Training, Inc doing corporate wellness and private counseling. She is currently on site at Dreamworks Animation helping employees achieve optimal health.


April Deiderich, RD

Consultant Dietitian

April Diederich, Registered Dietitian, graduated with honors with a Bachelor of Science degree in Nutrition, Dietetics and Food Science at California State University, Northridge. She completed her dietetic internship at the Veteran Affairs Medical Center in West Los Angeles.

In addition to consulting, April currently works as a Clinical Dietitian at St. John’s Regional Medical Center in Oxnard, providing medical nutrition therapy in intensive/critical care, rehabilitation and maternity patients. As part of the Healthy Eating and Training team, she has consulted for home health organizations, intensive outpatient counseling for eating disorders, and facilitated a weight loss program at Dreaworks Animation. Her future plans include training for NICU (Neonatal Intensive Care Unit) medical nutrition therapy and becoming a Certified Diabetes Educator.

April is a licensed Esthetician and Massage Therapist and encourages total wellbeing in her nutrition counseling sessions. As a new mother, April hopes to teach her daughter about all the things she loves – growing vegetables, preparing nutrient rich meals, and enjoying long de-stressing walks.


Ashley Mathew, RD, CPT

Consultant Dietitian

Ashley came to dietetics and nutrition in a roundabout way. In 2001 she received her BA from Fordham University in New York City in the area of International Studies. For the last 15 years she has studied, traveled, and worked in more than 25 countries. It was during her time in Japan that she realized her future profession would be in the promotion and maintenance of healthy lifestyles. Ashley became an RD in 2008 through the Coordinated Program in Dietetics at the University of Texas at Austin.

Ashley began her career as a consultant dietitian, working with the Executive Chef of Westminster Manor, a high end retirement community in Austin. After that she took a full-time position at Querencia Barton Creek, a resort-style continuing care retirement community (CCRC). There she managed the Dietary Services Department for their 4-story healthcare center. When Ashley moved to California in 2011 she joined HEAT. Now she also works for Olive View UCLA Medical Center as the Clinical Nutrition Manager / Assistant Director of Patient Services.

Ashley is an avid cook and foodie. She enjoys teaching clients how to add variety and balance to their diets both in the kitchen and while eating out. She has been a member of The Center for Mindful Eating (TCME) since 2009. In addition to her love of cooking and traveling, Ashley is also a Certified Spinning Instructor and Personal Trainer. Her goal is to help people find a healthy balance in their lives to promote lifelong independence and wellness.
